Spinach Rice Recipe

 Spinach Rice Ingredients:
  1. Hot cooked rice 500 gr
  2. 2 bunch spinach, trimming, boiled briefly, roughly chopped
  3. 1 small onion, roughly chopped
  4.  2 eggs, beaten off
  5. 100 ml liquid milk
  6. 100 gr grated cheese, to sow thereon
  7. 1 tablespoon chicken stock powder
  8. 2 tablespoons margarine, melted
Cooking Directions:
  1. Mix all ingredients except grated cheese
  2. Add into a heat resistant container that has spread with margarine and then sow
    grated chese above
  3. Oven for 30-45 minutes with a temperature of 2500

Uduk Rice With Peanut Sambal

Talk about rice again,Indonesia have many rice creation.One of all is Uduk Rice.I think u never heard it.Uduk rice maybe looks like simple steamed rice.But,when you taste it you will know the different.Its more tasted than simple rice.This food usually aviable in some event in Indonesian.Because it is Indonesia Tradisional food.Now.lets move to recipe

Ingredients:
  1. 500 grams Uncooked Rice
  2. 6 Bay Leaves  
  3. 3 stalks Lemon Grass, bruise to release flavor 
  4. 3 cm Greater Galangal, peeled and bruise to release flavor  
  5. 600 cc Coconut Milk, mix with 200 cc water 
  6. 1 teaspoon Salt  
  7. 2 Pandan Leaves, tied in a knot to release the authentic Pandan fragrance
  8.  1/2 teaspoon Coriander Powder 
  9. 1/2 teaspoon Nutmeg Powder
Side Dish:



Fried Shallots (Slice thinly 5 shallots, deep fried until golden brown, to fry shallots only takes a minute or two, do not over fry it or it will taste very bitter)
Sliced Omelette (beat 1 egg, add 2 tablespoons plain milk, a pinch or salt and white pepper powder then make an omelette, roll and slice thinly)

Peanut Sambal:
  1. 100 grams Peanut, fried until golden brown, grinded 
  2. 5 Red Chilies, grinded  
  3. 1 teaspoon Salt 
  4. 1 teaspoon Sugar  
  5. Lime Juice (from 1 Lime) 
  6. 150 ml Water
Directions:

Rice
  1. Clean uncooked rice with water, drain. 
  2. Steam rice for 30 minutes, set aside.  
  3. Boil coconut milk in a pot, add lemon grass, bay leaves, galangal, pandan leaves, salt, coriander powder and nutmeg powder. Cook in low fire, keep stirring until it boils. 
  4. Put in steamed rice into the pot, cook until the rice absord all coconut milk.  
  5. Re-steam coconut rice for 30 minutes. 
  6. Serve with fried shallots, sliced omelette and peanut sambal.
Peanut Sambal:
  1. Mix grinded peanut with water, add grinded chilies, salt, sugar and lime juice.
  2. Mix it well, set aside.

Meatball Fried Rice

Indonesia is identic with rice.Yeap,Indonesian people never eating without rice.They eating steamed rice 3 times everyday.But now,we don't talking about simple steamed rice.We will discuss about "Meatball Fried Rice".This is more taste of rice.So,what we waiting for.Lets go to the ingredients.

Ingredients:

2 plates cold cooked Rice
10 ready to use Beef Meatballs, sliced
2 Eggs, lightly beaten
3 Red Bird's eye Chillies, crossly sliced (optional,if you like it super hot use birds eye chilli, if not, please use regular chilli or bell pepper chilli)
3 Red Chilies, crossly sliced
2 cloves, Garlic, minced
2 shallots, minced
Onion, sliced
1 teaspoon Candlenut Powder
1 stalk Spring Onion, sliced
3 tablespoons Oyster Sauce
1 tablespoon Soy Sauce
1 teaspoon Worcestershire Sauce
1 teaspoon Sugar
1 teaspoon White Pepper Powder
1 teaspoon Vegetable Oil

Directions:

1. Heat Vegetable oil in a wok, saut garlic, shallots and onion for 2 minutes until soften and fragrant.
2. Add Candlenut powder, bird's eye chilies and red chilies, stir fry for 1 minutes.
3. Pour beaten eggs, scramble finely. Pour oyster sauce, soy sauce and Worcestershire sauce. Stir it.
4. Place cold cooked rice in the wok, mix it well, cook for 5 minutes. Season with sugar and white pepper powder.
5. At last, sprinkle spring onion, stir it well, serve.(for 2 porsions)
