Snaper Head Curry Recipe:Aceh Traditional Food

Snaper Head Curry Ingredients:
  1. 3 snapper head split in half, coat with lemon juice
  2. 5 tablespoons cooking oil
  3. 1 turmeric leaf LBR
  4. 2 stalks lemongrass, crushed
  5. 2 lime leaves
  6. 600 ml coconut milk
  7. 5 red chilli, halved lengthwise
  8. 5 green chilli, halved mamanjang
  9. 3 eyes kandis tamarind
Blended Spices:
  1.      * 10 shallot
  2.      * 4 cloves garlic
  3.      * 1 tsp pepper
  4.      * 5 pcs pecan
  5.      * 1  galangal
  6.      * 1  turmeric
  7.      * 1 segment ginger
  8.      * 2 tsp salt (to taste)
Cooking Directions:
  1. Stir fry ground ingredients until fragrant. Enter the turmeric leaf, lemon grass and lime leaves.
  2. Pour coconut milk and bring to a boil while stirring.
  3. Enter the fish head, chili, sour kandis. Mix well. Cook over low heat until cooked through and sauce thickens.
     
 Makes 4 servings
